Le Chablis La Part des Anges est issu d'1,5 hectare de vignes sélectionnées par le domaine Grossot sur le village de Fleys et qui ont une quinzaine d’années. Les sols de type Kimmeridgien sont constitués d’argiles très blanches et de grosses pierres calcaires.
En ce qui concerne la vinification, après un léger débourbage le jus est mis en cuve pour la réalisation des fermentations alcoolique et malolactique et pour l’élevage du vin, sur lies. En cas de nécessité, un collage du vin peut être effectué, mais il est toujours filtré avant la mise en bouteille, qui intervient 15 mois après la récolte.
Il en résulte un chablis à la robe pâle, couleur vieil or. Son nez dévoile des notes de fruits blancs, de fleurs blanches, de noisette, de fougère et de minéralité, pour une bouche fraîche et tendue. La finale est d’une bonne longueur avec une note d’amande grillée.
Un vin à boire jeune aussi bien qu'après quelques années. Il s’accordera parfaitement avec les huitres chaudes, les poissons en sauce, les volailles, le veau, l’andouillette et les escargots.
