this bread belongs equally to the alsace region of france and the vienna in austria. there are various ways of spelling kugelhopf and even more ways of making and baking it. in alsace it is a savory bread made with bacon, lard and/or fromage blance and cream cheese. the german and austrian kugelhopf, by contrast, it a yeasted brioche-style bread, made using golden raisins and enriched with butter and eggs. a good kugelhopf has a delicious citrus flavor, provided by lemon rind and juice. the kugelhopf is baked in a fluted mould with a central funnel, and the top billows out like a "kugel",or ball.
